Produk ini berasal dari Australian Angus beef steer, yaitu sapi jantan muda yang dibudidayakan khusus untuk menghasilkan daging berkualitas tinggi. Daging steer dikenal memiliki warna lebih cerah, rasa khas grass-fed yang bersih, serta tekstur yang lebih empuk secara alami. Daging ini telah melalui proses ageing terkontrol selama 3 hingga 6 minggu pada suhu +1 hingga +2°C. Proses ageing sangat penting terutama untuk potongan steak yang dimasak dengan metode grilling atau BBQ, karena berperan besar dalam meningkatkan kelembutan, pengembangan rasa, dan konsistensi kualitas daging.

Penjelasan Porterhouse, T-Bone & Club Steak semuanya berasal dari beef short loin, yang terdiri dari striploin (sirloin) dan tenderloin.

This product comes from Australian Angus beef steer, young male cattle raised specifically for producing high-quality beef. Steer beef is known for its lighter meat color, clean grass-fed flavor, and naturally tender texture. The beef has undergone a controlled ageing process of 3 to 6 weeks at temperatures between +1 to +2°C. Ageing is especially important for steak cuts prepared using grilling or BBQ methods, as it plays a crucial role in enhancing tenderness, flavor development, and consistency of quality.

Beef Short Loin is a premium section of beef located along the lower back, widely recognized as the source of some of the most popular and high-value steak cuts. This cut offers an excellent balance between natural tenderness and rich beef flavor.

Beef Short Loin consists of two main muscles:

  • Striploin (Sirloin / New York Strip) – firmer texture, juicy, with a bold beefy flavor

  • Tenderloin (Filet) – extremely tender, lean, and fine-textured

Porterhouse, T-Bone & Club Steak Explained all come from the beef short loin, which contains both the striploin (sirloin) and the tenderloin.

The striploin maintains a relatively even and consistent shape along the length of the short loin, while the tenderloin is thick and bulky at one end and gradually becomes smaller and more tapered toward the other end. When the beef short loin is cut into steaks using a bandsaw, the section with a large, well-developed portion of tenderloin is classified as a Porterhouse Steak. The remaining section, which contains a smaller amount of tenderloin, is cut into T-Bone or Club Steaks, making them naturally more affordable than Porterhouse steaks.
