The Tenderloin, also known as Eye Fillet or Filet Mignon, is the most tender and leanest cut of beef — taken from the lower back, with a fine texture, delicate flavor, and natural tenderness. It’s highly prized in gourmet dining and fine grilling. Grain-fed cattle provide subtle marbling, buttery flavor, and consistently soft texture — perfect for elegant dishes like steak medallions or beef wellington.

  • WAGYU TOKUSEN In Tokusen farm, they crossbreed our wagyu with other breeds. Raising this breed to reach its best potential requires following traditional Japanese methods. This includes feeding a specialty feed for a year longer than conventional cattle and offering attentive, individual care. We nurture TRUE BLOOD Wagyu cattle.
  • AGED; this means the beef has been stored for a specific period (3 to 4 weeks) at temperatures of +1 to 2 °C. This process naturally tenderizes the meat, enhances the beef’s natural juices, provides a richer, stronger flavor profile.
    Ageing beef, especially steak cuts for grilling/BBQ, is essential to enhance tenderness and ensure consistent quality.
  • CHILLED, never Frozen – Maintains natural texture, juiciness, and freshness.
